Hi there! I’m Katie and I’m so glad you’re here!
I’m a former professional chef and restauranteur based in Seattle. During my time as a personal chef, I loved cooking for my clients and their families but I always wondered how I could share my recipes with even more people. And so, Simple Spoonfuls was born!
my approach to food
When it comes to food, I focus on creating easy meals with a healthy twist. Life is all about balance, and I don’t believe in depriving yourself by being on a strict diet. Instead, I like to find ways to lighten things up or add extra nutrients so you can still enjoy the foods you love.
I also believe in the power of batch cooking! Traditional meal prep focuses on creating a recipe in full and portioning it out into containers to simply reheat throughout the week. This is fine if you’re closely counting your macros and trying to lose weight. Most people don’t want to eat the same thing day after day though.
By batch cooking some strategic components, you can give yourself a leg up on your meals for the week ahead. Plus, I like to show you ways to mix and match those ingredients so that you can enjoy some variety in your meals while keeping things fresh and interesting.
Lastly, you’ll quickly realize that I love to eat the rainbow! My recipes always incorporate as many colors as possible so that you can eat with your eyes as well. To me, eating the rainbow means that you’re incorporating lots of different fruits and vegetables to maximize your nutrient intake. For me, it’s such an incredible mood booster to eat a bowl full of beauty and color!
Behind the scenes
Born and raised in Seattle, I’m a Pacific Northwest girl to the core. I love mountain biking, fishing, and kiteboarding. Basically, anything that involves being active outdoors. I’m also an obsessive cookbook hoarder that dreams of owning a farm with tons of animals someday. I can’t live without strong coffee and red wine.
Someone once told me that my spirit animal would be a hummingbird because I never sit still. My husband and I have always been ones to follow our dreams, and for as long as I can remember, we’ve had numerous fun projects or businesses in the works. Lately, we’ve been converting our Sprinter van into a tiny house so we can have some epic off-grid family adventures. More to come on that!
